"## Strawberry Wine Recipe (5 Gallons) ### Ingredients * 18 lbs strawberries * 10 lbs sugar * 2 tbsp yeast nutrient * 1 tsp pectic enzyme * 5 tsp acid blend * 1 tsp wine tannin * 1 packet wine yeast (ICV-D47) * 10 Campden tablets (5 prior to fermentation, 5 at bottling) ### Directions 1. Remove stems and leaves from strawberries and cut into pieces. Avoid over-processing to prevent bitterness. 2. Combine all ingredients except wine yeast in a primary fermenter. Add pulp in a fermentation bag, submerge in the mixture, and add water to reach 5 gallons. Add 5 crushed Campden tablets. 3. Cover the fermenter with a clean towel and wait 24 hours to allow the Campden tablets to sterilize the juice. 4. Sprinkle wine yeast over the juice surface and cover with a clean towel. Ferment for 5-7 days, with foaming activity expected within 24 hours. 5. After 5-7 days, remove and discard the pulp. Siphon the wine into a carboy, leaving sediment behind. Add water back to 5 gallons if needed. 6. Attach an airlock filled halfway with water. Ferment for 4-6 weeks, until completely clear. Use a hydrometer to verify completion (0.990-0.998 specific gravity). 7. Siphon the wine off the sediment again, leaving all sediment behind. Stir in 5 crushed Campden tablets and bottle. ### Additional Information * Sanitize all equipment before starting. Use four crushed Campden Tablets per quart of water for sanitizing. * Maintain stable fermentation temperatures between 70-75°F. * To sweeten the wine, add sugar or honey to taste after fermentation is complete. Stabilize with Potassium Sorbate to prevent re-fermentation. * Consider using a Wine Making Hydrometer to measure sugar concentration and monitor progress.
