Loess Hills IPA-Style Traditional Mead

"Clone recipe for IPA-Style Mead inspired by Evil Genius. Batch size 3 gallons, ABV ~6%, lightly carbonated. Ingredients: 7 lbs light wildflower or clover honey, 3 gallons water, 1 oz Chinook hops (divided), 1 oz Cluster hops (divided), 1 oz Cascade hops (divided), 3 tsp yeast nutrient, 3 g Lalvin EC-1118 or US-05 yeast, priming sugar or honey for bottling. Method includes preparing must with half honey and hops, simmering, cooling, adding remaining honey and water, pitching yeast, fermenting 2 weeks, dry hopping 7-14 days, aging 1-2 months, priming and bottling for light carbonation."
