Lemon Spinach Chickpea Cream Pasta

"Pasta cremosa de garbanzos y espinacas al limón. Healthy and quick recipe combining creamy chickpeas with fresh lemon and spinach. Serves 2. Ingredients: 7 oz short pasta (fusilli or penne), 5.3 oz cooked chickpeas, 3.5 oz fresh spinach, 2 tbsp natural or Greek yogurt, 1 garlic clove, juice and zest of 1/2 lemon, 2 tbsp extra virgin olive oil, salt and pepper to taste, optional grated Parmesan or nutritional yeast. Instructions: Cook pasta al dente, reserve 1/4 cup pasta water. Blend chickpeas with yogurt, garlic, lemon juice, salt, pepper, and olive oil until creamy, adjust with pasta water if needed. Sauté spinach in 1 tbsp olive oil for 2-3 minutes. Mix pasta with spinach and chickpea cream. Serve with lemon zest and optional cheese or yeast."
