"Basic Traditional Clover Mead (1 Gallon) • 2.5–3.5 lbs clover honey • Spring water to 1 gallon • 1 packet wine yeast (EC-1118, 71B-1122, or similar) • Yeast nutrients (follow manufacturer’s instructions) Process: 1. Sanitize all equipment. 2. Mix honey with water in a fermenter. 3. Add yeast nutrients. 4. Pitch yeast. 5. Ferment at recommended temperature for yeast strain. 6. After fermentation (7–14 days), rack off lees. 7. Age for 3–6 months for best results."
