Name: Garlic Citrus Roast Chicken with Rice
Yield: 6
Ingredients: ORIGINAL RECIPE; Garlic Citrus Roast Chicken with Rice - Bright roasted chicken with orange, lemon, and garlic, served with fluffy rice and tender sautéed green beans for an easy, comforting three-serving meal.; 1 whole chicken, about 3 to 4 lb; 1 1/2 tsp salt; 1 tsp black pepper; 1 orange, quartered; 1 lemon, quartered; 1 head of garlic, halved crosswise; 3 garlic cloves, smashed; 2 tbsp olive oil; 1 tbsp chopped fresh oregano; 2 (14 oz) cans chicken broth, divided; 1/4 cup frozen orange juice concentrate, thawed; 1/4 cup fresh lemon juice; 1 cup long-grain white rice; 2 cups water; 1/2 tsp salt, for the rice; 1 lb green beans, trimmed; 1 tbsp olive oil, for sautéing the green beans; 1/4 tsp salt, for the green beans; 1/4 tsp black pepper, for the green beans; ORIGINAL RECIPE INSTRUCTIONS; Preheat the oven to 425°F. Place a rack in a roasting pan or use a large oven-safe skillet.; Pat the chicken dry with paper towels. Rub it all over with olive oil, salt, pepper, and chopped oregano, including under the skin if easy to lift.; Stuff the chicken cavity with the orange quarters, lemon quarters, halved garlic head, and smashed garlic cloves.; Set the chicken breast-side up in the pan. Pour 1 cup of the chicken broth into the bottom of the pan.; Roast for 20 minutes, then reduce the oven temperature to 375°F and continue roasting for about 40 to 55 minutes more, or until the thickest part of the thigh reaches 165°F and the juices run clear.; If the top browns too quickly, loosely tent it with foil during the last 15 to 20 minutes.; While the chicken roasts, rinse the rice until the water runs mostly clear. In a small saucepan, combine the rice, 2 cups water, and 1/2 tsp salt. Bring to a boil, then reduce to low, cover, and simmer for 15 to 18 minutes, until the water is absorbed and the rice is tender. Remove from the heat and let stand, covered, for 5 minutes.; While the rice cooks, toss the green beans with 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper.
