Smoky Street Corn Salad with Seared Scallops

"Street Corn Salad with Seared Scallops recipe using metric units. Ingredients: 4 fresh corn cobs, 2 medium tomatoes diced, 15 g ground cumin, 16 g smoked paprika, 1 tsp salt, 0.5 tsp black pepper, juice of 2 limes (about 60 ml), 360 ml mayonnaise, 3 green onions for curls, 40 g cotija cheese crumbled, 60 ml Sriracha aioli, 400 g large sea scallops (about 12), 15 g blackening seasoning, 1 tbsp olive oil or butter. Instructions: Cut corn off the cob, roast at 175°C for 10 minutes, mix with tomatoes, cilantro, cumin, paprika, salt, pepper, lime juice, and mayo. Ice green onion curls for garnish. Pat scallops dry, season with blackening spice, sear in oil or butter for 1.5-2 minutes per side. Plate corn salad in crescent shape, nestle scallops atop, crumble cotija cheese, garnish with green onion curls, and dot Sriracha aioli around plate."
