Rustic Mediterranean Baccala Stew

"Baccala stew (Cod stew) Ingredients 1. 8 pieces of dry baccala desalted for 2 days, changing water often* 2. 2 large potatoes 3. 1 bell pepper 4. 3 cloves garlic, herbs: oregano and basil 5. 1 can crushed tomatoes (medium sized) 6. Salt and pepper to taste 7. 3 tbsp olive oil Brown garlic in olive oil, using a large skillet. Add pepper, and quartered potatoes, salt, pepper, and herbs. Stir in olive oil. Add tomatoes. Let cook on stove until potatoes are tender. Then add pieces of baccala on top, cover, and let simmer for 15 minutes until desired tenderness. Serve hot. Serves 4. *Fresh cod works but is not as tasty to some people."
