Low-Carb Chicken Artichoke Wraps

"Low-carb chicken wraps with artichokes. Ingredients include 1 whole egg, 4 egg whites, 1/2 cup milk, 1/4 cup sifted coconut flour, cooking spray, 2 cups cooked shredded chicken breast, 1/2 cup chopped artichoke hearts, 1/4 cup chopped red onion, 2 cups chopped fresh spinach, and 1/4 cup fat-free Italian dressing. Instructions: Beat egg, egg whites, and milk until combined and slightly frothy. Sift coconut flour into mixture and beat again. Let batter rest for 15 minutes. Mix chicken, artichokes, onion, spinach, and dressing; keep refrigerated. Heat cooking spray in 10-inch nonstick pan over medium heat. Rebeat batter and pour 1/4 cup to cover pan bottom thinly. Cook until edges brown, flip and cook 1 more minute. Slide wrap onto plate. Repeat for 6 wraps. Cool wraps. Divide chicken mixture evenly among wraps (about 1/2 cup each) and roll up."
