Hearty Vegan Farfalle with Italian Veggie Bolognese

"Recipe for 3 people: Heat 2 tbsp oil in a pan. Fry 1 chopped onion until translucent. Add 2 cloves minced garlic and fry briefly. Add 250g Terra Plantaardig vegan minced meat, breaking it up with a wooden spoon as it cooks. Add 250g AH Roerbakgroente Italiaans champignons (Italian stir-fry vegetables with mushrooms). Stir in 70g tomato puree and 1 tbsp thyme. Pour in 100ml red wine and 100ml water. Season with salt, pepper, and optional chili flakes. Let simmer gently while cooking 200g farfalle pasta. Add pasta water if sauce gets too dry. Mix pasta and sauce together. Serve with vegan parmesan and a glass of leftover red wine."
