Hearty Half-Cauliflower Fried Rice

"Keto Cauliflower Fried Rice with half cauliflower rice and half regular rice mixed in. Use 4 cups cauliflower rice (fresh or frozen), 2 eggs lightly beaten, 1 cup mixed diced vegetables (carrots, peas, bell peppers), 2 chopped green onions, 2 cloves minced garlic, 2 tbsp coconut aminos (soy sauce substitute), 1 tbsp sesame oil, and optional cooked chicken, shrimp, or tofu for added protein. Instructions: Heat sesame oil in skillet over medium heat, sauté garlic 30 seconds, add vegetables and stir-fry 3-4 minutes, push veggies aside and scramble eggs, add cauliflower rice and protein, stir together, drizzle coconut aminos, cook 3-4 minutes to heat through, garnish with green onions and serve hot. Keep cauliflower texture by simmering after mixing with rice."
