Fudgy Vegan Cocoa Brownies

"Get your pan ready: Ask an adult to help you turn the oven on to 350°F. Line an 8x8 square baking pan with parchment paper. Let some paper hang over the edges like “handles.” Melt the butter: Carefully melt 3/4 cup of vegan butter in the microwave or on the stove. Pour the melted butter into a mixing bowl. Add the sugars: Add 3/4 cup brown sugar and 1 cup white sugar to the bowl. Use a whisk to mix them with the butter until it looks like thick paste. Add the eggs and vanilla: Crack in 2 eggs and add 1 tablespoon of vanilla. Whisk it all together until smooth. Add the dry stuff: Now add 3/4 cup cocoa powder, 1/4 teaspoon salt, and 1/2 cup + 2 tablespoons flour. Gently whisk until it’s all just mixed. Don’t overmix! Pour into the pan: Use a spatula to scrape all the brownie batter into your pan. Spread it out evenly. Bake your brownies: Ask an adult to help you put the pan in the oven. Bake for 30–40 minutes. At 30 minutes, check with a toothpick in the middle. If it has a few crumbs (not wet batter), they’re done! Cool and enjoy: Let the brownies cool all the way before cutting. Then enjoy your yummy treat!"
