"Chicken, Bacon & Avocado Chopped Salad with Creamy Garlic Lemon Balsamic SERVINGS 2 INGREDIENTS For the Salad 4-6 cups lettuce, finely chopped 1/2 cup red onion, diced 2/3 cup chickpeas 1/2 cup cucumber, diced 1/3 cup pepperoncinis, diced 2/3 cup bacon, cooked & diced 1 cup chicken, diced 1/2 avocado, diced 2/3 cup parmesan For the Garlic Lemon Balsamic Dressing 1 tablespoon mayonaise 2 tablespoons olive oil 1 tablespoon lemon juice 1.5 tablespoons balsamic viniagrette 1 tablespoons garlic paste or minced garlic Seasonings: salt & pepper to taste INSTRUCTIONS 1. For your bacon and chicken, I recommend cooking ahead of time! Feel free to use the chicken of your choice (grilled, rotisserie, etc.)! 2. Prep your salad ingredients, making sure to dice and chop everything finely! I personally think that the smaller you chop your ingredients, the better your salad tastes! 3. Add all your lettuce, tomatoes, chickpeas, red onion, cucumber, pepperonis, bacon, and chicken to a bowl. Then top it with your parmesan! 4. To create your Garlic Lemon Balsamic, combine your mayo, olive oil, lemon juice, balsamic vinaigrette, garlic paste, and salt and pepper to taste in a separate bowl! 5. Pour over, toss, and enjoy!!"
